I am going to write a menu several times a month in the hopes that I will eat better. While I love paring Fritos with chocolate pudding or having popcorn and canned corn for dinner, I KNOW this is not too healthy. Lack of shopping foresight makes for strange pairings at mealtime.

First Choice Menu
- Monday: Get invited to eat at someone’s home
- Tuesday: Get invited out to eat (before class which is 6-10 pm)
- Wednesday: Get invited to take someone’s leftovers to my home (because I have class 6-10 pm)
- Thursday: Take some of yesterday’s leftovers to school because I have class 6-10 pm
- Friday: Get invited to eat at someone’s home
- Saturday: Find a dinner care package on my doorstep
- Sunday: FAST because I’ve eaten so much this week.
Second Choice Menu
- Monday: Mixed Salad and Butternut squash soup (from Trader Joe’s) with Mandarin Orange muffins
- Tuesday: Chicken Enchiladas with Refried Beans (Mom’s recipe for the enchiladas – definitely yummy but not low fat)
- Wednesday: Spaghetti and Meatballs
- Thursday: Sweet Potato Enchiladas (LMK if you’d like the recipe. I can email it to you. Or it is in our church cookbook on page 107.)
- Friday: Chicken Fried Rice and Chow Mien
- Saturday: Lettuce Wraps filled with Southwestern Chicken Salad
- Sunday: Get invited out to eat at someones’s home or Leftovers if that doesn’t pan out.

Hi Susan, your menu sounds wonderful! So how do we get ourselves invited to your place?
My maple chicken recipe is a very easy marinade, equal parts maple syrup and soy sauce. I use chicken thigh fillets, and grill them. The cottage cheese I combine with parmesan cheese for a less fattening topping than the sour cream I prefer. It’s a Weight Watcher’s idea.

You forgot under plan a, take some leftovers home from staff lunch(from someone else) or have someone treat you to lunch on Tuesdays, any leftovers, if any can go home.
Invitation for lunch is still open or dinner or breakfast or whatever…
San Francisco Joe is wonderful for dinner & even better for breakfast.

I love both your menus! That TJs butternut squash soup is fabulous!
As an aside, it is wonderful as a single person to have people to eat with. When the FunGirls didn’t all live together, we would often have each other over for meals, so that all of us would be together. Made it a lot more fun to cook (and eat!)
And if I lived in Rancho still, I would definitely invite you over and send you home with two days worth of leftovers.

I am very generous. If menu one works for me, I’ll share!
I bought maple syrup (on sale) and soy sauce last night. I try your maple chicken for when my son comes home for his birthday dinner.
I’ll also try cottage cheese instead of sour cream on my tates. Who knows I may love it. Until I tried it, I didn’t know I’d love beans on baked potatoes.

You are awesome. A great example of nurture and fun!
I know it would be a good thing to invite others over to eat. I actually never thought I be one of those people who eat so much junk food as a meal replacement. When my kiddos were home, I prided myself on what we served. And I loved (most of the time) to cook.
Lst night I went shopping (finally). I had a mini revelation. I can buy myself and make myself foods I.e. I bought a fresh pineapple and fresh form the deli Spinach and feta soup. I have a recipe to make a smaller portion of crockpot enchiladas. It felt decadent and nurturing.

Thank you ladies SO MUCH for the prayer support – it really means a lot to me (and my family). It is helping. Mom is healing well, and my sister and I are still on the same team. (Crisis brings out all the dysfunctional stuff in a family, and this is NO TIME for that mess!) It has been a hard week, but I can FEEL the Lord carrying me. Thank you!

Susan…We would love to have you over for dinner some time…that is if you can handle us! LOL Also, a very good idea for having good food/good for you food to eat is to make something like a casserole and freeze it. To avoid over cooking or leftover taste, I freeze before it cooks, then I take it out, thaw and cook it. It works really well. If it has pasta in it, be careful to decrease a little liquid in it or it swells from the freezing and the pasta gets FAT. You could make in smaller corning dishes or loaf pans so that you would have a Susan dinner portion and one or two leftover portions instead of having to eat leftover for a month of the same thing! I don’t know if that all made sense, hard to squeeze into a “comment”, but if you are interested I would be happy to share freezing ideas. It is one of the ways that I survive because I never know when a bad migraine will hit and can wipe me out a couple weeks, that way my family still gets to eat. But if you come over we won’t feed y ou frozen stuff…we’ll treat you like a Queen…as long as you don’t mind the sticky throne! LOL

I will definitely talk to you about freezing tips. I hope to make some meatloaf today and will freeze in smaller portions, like you suggested.
