Cooking 3 Meals in a Menu Plan for One

This week I am cooking according to an unambitious menu plan: 3 dinner meals. Unambitious is better than “paring Fritos with chocolate pudding or having popcorn and canned corn for dinner.” Go to Menu Plan Monday for a wider variety of menus.

Monday: Chicken Tortilla Soup. See the middle of this post for the recipe. Truly yummy and easy!

Tuesday: Spaghetti sauce with chicken chunks over elbow macaroni.

Wednesday: Chicken Tortilla Soup.

Thursday: Ham fried rice (with lots of veggies) over chow mein crispy noodles.

Friday: Spaghetti sauce with chicken chunks over elbow macaroni.

Saturday: Ham fried rice over chow mein crispy noodles.

Sunday: Potluck at my hospitality group. I have pineapple and cherry pie filling, so I’ll be bringing dump cake. Click here and read comment #7 for the recipe.

    Ha! I had dump cake for dessert tonight (and last night). Only we didn’t have cherry topping, so I made a compote out of some frozen mixed berries and some Loganberry syrup. No walnuts on top of mine – instead I had it a la mode. 🙂 (For variation, use chocolate cake mix instead of yellow. oooh baby!)

    Comfort food is always my “go to” thing. My number one favorite: Baked chicken, mashed potatoes, and green beans The nice thing is that when I need some comfort food, but don’t have time to cook the chicken – Safeway comes to my rescue! They have good chicken (and meatloaf!)

    Doodah – your compte sounds ggod. I just might go for the “oooh baby” version and use choclate cake mix for tonight’s potluck.

    Hmmm – I never have had those foods from safeway. I do sometimes have fresh soup from Bel-Aire. Tommor I am going to try out a new soup recipe on a frind. I am going to be aprt of a soup swap and I want to make sure the soup is tastey.
