Sweet Potato Lentil Stew in Crock Pot
I’m not much of a soup or stew maker, but last week I made a stew that was tasty, easy and a decent price. This Sweet Potato Lentil Stew has 10 ingredients and 3 of those are spices.
Throw it in the crock-pot in the morning and you’ll have a comforting meal to greet you at the end of your day. If you’d like to add meat, a chicken-apple sausage would be a nice addition. If you have a little more energy, make a batch of herbed drop biscuits and a garden salad.
Ingredients
- 4 cups vegetable (or chicken) broth
- 3 cups (about 1.25 lbs) sweet potatoes: cubed
- 1 cup lentils: rinsed
- 3 carrots: medium-size, cut into 1 inch chunks
- 1 onion: medium-size, chopped
- 5 garlic cloves: minced
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 cup fresh cilantro or parsley
Steps
- Combine first 8 ingredients (through the ginger) in slow cooker.
- Cook on low 5-6 hours, until vegetables are tender.
- Stir in salt and cilantro (or parsley) before serving.
