French Toast Supreme Casserole for 2

So what do you do when you can’t sleep? One night this week I couldn’t sleep so I first cleaned the kitchen and then I started thinking about breakfast foods. I read through my CNC cook book and recipes on my computer. I came up a new recipe, French Toast Supreme Casserole.

This recipe is a very forgiving one and the variations are many. It’s the addition of the cheese and ham that makes this recipe “supreme.” You can add more cheese and ham, if you like. I can’t tolerate a lot of cheese and I used what ham I had in the fridge. You could substitute cooked sausage for the ham. Or don’t use any meat and cheese at all.

French Toast Supreme Casserole for 2

Ingredients

  • 4 slices of bread – buttered on both sides and cubed
  • 3/4 cup grated cheese  – divided in half
  • 1/2  cup ham – cubed (I used deli slices and cut them into smaller pieces)
  • 1/8 cup maple syrup
  • 3-4 eggs  (I used 4 medium-sized eggs.)
  • 1 ¼ cups milk  (half and half or 2% – it tastes yummy with either)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Directions

  1. Lightly butter or spray with cooking spray a 9x5x3-inch loaf pan.
  2. Line bottom of pan with half of the bread cubes.
  3. Layer the ham and then half of the cheese on top of the cubes.
  4. Pour the maple syrup on top of this.
  5. Top with remaining bread cubes.
  6. In a large bowl, beat together eggs, milk, vanilla and cinnamon.
  7. Pour egg mixture over bread.
  8. Top with remaining cheese.
  9. Cover with tinfoil and place in refrigerator for a minimum of 10 minutes. It is best if  left over night.
  10. Take out and let it stand until room temperature (15-30 minutes).
  11. Bake uncovered at 325 degrees for 60 minutes, until top is golden brown and the loaf is not runny-looking inside.

This tastes especially good as left-overs the day after it is baked.

Optional: Serve with a sprinkling of powdered sugar or warmed maple syrup.

    This sounds easy and delicious! I have a ham in the freezer that I plan to cook soon. I am bookmarking this recipe to try with some of the leftovers. YUM!

    Sounds like a Egg Strata where you layer bread, ham & cheese. Letting it soak all night and baking it up in the morning.

    Donetta – Good idea. This recipe would be quite easy to double. have fun eating.

    Lynette – It is exactly like a strata. But the strata recipes I looked at were savory. The “batter” for this one is just like my French toast “batter.”

    Brenda – Breakfast pizza sounds good too. I am going to check your site to see if you have the recipe there. If not, I’ll be bugging you for it.
