Chocolate Orange Chia Pudding
This single serving of pudding is great for breakfast, snack or dessert. When I eat it for breakfast, I try to have another protein source (like a hard-boiled egg). I wonder what it would taste like, if I added some protein powder to the pudding?
Ingredients
- 1/2 cup + 2 Tbsp almond milk, unsweetened
- 1/2 tsp orange extract
- 2 Tbsp cocao nibs – optional
- 2 Tbsp cocoa powder, unsweetened
- 3 Tbsp chia seeds
- 2 tsp Truvia or Xyla (I prefer Xyla.)
- 1/2 tsp fresh orange zest – be careful as you can put too much in
Instructions
- Mix the ingredients in a bowl. Set aside.
- Mix again about 15 minutes later
- After about 30 minutes, the seeds will be plump and the mixture will be pudding-consistency. This can be made the night before.
- Eat.
