Grateful 43 – Pumpkin Foods

Today is the first day of Fall. HURRAY. This means munching crisp apples, sitting around a fire pit, watching football, and stomping through fallen leaves.

It also means pumpkins and pumpkin foods. Pumpkin is healthy. A serving of pumpkin has large amounts of fiber, 100% of the daily vitamin A requirement, lots of vitamin C, and potassium. It also has a smaller, but significant, amount of vitamin B6, vitamin E, iron, and magnesium. These are just some of the nutrients and vitamins.

Today, I am grateful 4 3 Pumpkin Foods.

ONE. Low Carb Pumpkin Pancakes. I first discovered these pancakes while cooking with Michelle from her Paleo cookbooks. About once a month I make up a BIG batch and put them in the freezer. I LOVE having fast, healthy, inexpensive BREAKFAST food in my freezer. They defrost well and taste great alone or with some no-cook Strawberry Chia Seed Jam.

TWO. Pumpkin Fudge Just Got Pumpkinier. I used to be a die-hard chocolate fudge lover. Problem is, I only made it at Christmas time.Then in 2008 I wanted to eat fudge during the fall so I tried a pumpkin fudge. After I made one change, I became a pumpkin fudge lover, too. And this gets made anytime in the fall.

THREE. Pumpkin Muffins for Those Who Need Dairy-free, Egg-free, & Gluten-free Treats. For a lot of years my daughter had to eat dairy-free and egg-free (in addition to gluten-free). When I found this recipe it was a breakfast, snack and dessert game-changer. And it is so delicious that everyone will love eating it.
